Unusual Pairing - Lanark Blue and Bee's Knees

Lanark Blue is an iconic Scottish cheese. It has a beautiful creamy, fudgy texture with an initial sharpness that mellows into salty umami with rich mushroom and petrichor notes. We wanted to match it with something that brought out the blue character while tempering some of the natural saltiness.


Enter..the Bee's Knees. The herbaceous character of the gin brings out the depth of flavour in the blue, while the honey tempers the natural saltiness. The citrus finish lightens the intensity and gives a lovely clean finish.



60ml Gin (we used 8 Lands)

30ml Lemon Juice

15ml Honey Syrup (3 parts honey dissolved in 1 part boiling water)


Shake over ice, strain into a chilled coupe glass for the classic serve or over ice in a highball for a long drink.
